Gourmet Seafood Cassolette

Instructions

  1. Sauté the Aromatics
    Heat olive oil in a skillet over medium heat. Add the shallot and garlic, sautéing until soft and fragrant.
  2. Cook the Seafood
    Add the shrimp and scallops. Cook for 2–3 minutes, turning gently, until lightly golden and just cooked through.
  3. Add the Crab
    Gently fold in the crab meat. Season with salt and black pepper to taste.
  4. Deglaze with Wine
    Pour in the white wine and allow it to simmer for 1–2 minutes, reducing slightly to concentrate the flavor.
  5. Create the Cream Sauce
    Stir in the cream and Parmesan cheese. Reduce heat and simmer until the sauce thickens and becomes silky.
  6. Finish & Serve
    Garnish with fresh parsley and serve hot in mini casseroles or ramekins.

Use fresh seafood whenever possible for the best flavor and texture.
Avoid overcooking—shrimp and scallops cook quickly and can become rubbery if left too long.
