
Soft, fluffy drop-style biscuits loaded with juicy blueberries and topped with a sweet lemon glaze. Great for breakfast, brunch, or a quick treat!
Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 cup cold milk
- 1/3 cup white sugar
- 5 tbsp butter (freeze 1 stick for grating/chunking)
- 4 tsp baking powder
- 1 tsp salt
- 3 oz fresh or dried blueberries
For the Glaze
- 1 cup powdered sugar
- 1/8 cup water
- 1 tsp vanilla extract
- 1/2 tsp lemon juice
- 2 tbsp honey
Instructions
1. Preheat and prepare
- Preheat oven to 450°F (230°C).
- Place 1 stick of butter in the freezer for about 1 hour so it becomes extra firm.
2. Make the biscuit dough
- In a large bowl, mix: flour, sugar, baking powder, and salt.
- Add the cold milk and blueberries; stir gently.
- Remove the frozen butter from the freezer and break or grate it into small chunks.
- Sprinkle the frozen butter pieces evenly over the dough.
- Fold and knead the dough several times until the butter is evenly distributed.
3. Shape the biscuits
- Place the dough on a floured surface.
- Roll to 1/8–1/4 inch thickness.
- Cut out about 6 biscuits using a biscuit cutter (or a cup).
4. Bake
- Place biscuits on a baking sheet.
- Bake for 7–12 minutes, or until lightly golden on top.
- Melt 1 tbsp butter and brush over the hot biscuits.
5. Make the glaze
- Mix together powdered sugar, water, vanilla, lemon juice, and honey until smooth.
- Drizzle over warm biscuits.
