Beef Enchilada Casserole

Beef Enchilada Casserole: A Bold, Cheesy Comfort Dish Made Simple

If you’re craving the rich, zesty flavors of enchiladas but want something easier to prepare, this beef enchilada casserole is the perfect solution. Instead of rolling tortillas one by one, everything is layered into a single dish and baked until bubbly and golden. The result? A hearty, crowd-pleasing meal that’s perfect for weeknights, gatherings, or meal prep.

What You’ll Need

  • 500 g (1 lb) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (400 g / 15 oz) enchilada sauce
  • 1 can (400 g / 15 oz) diced tomatoes, drained
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 6–8 small tortillas (corn or flour)
  • 2 cups shredded cheese (cheddar, mozzarella, or mix)
  • Optional: 1 cup black beans (drained), 1 cup corn
  • Fresh cilantro or green onions, for garnish

How to Make It

1. Cook the Beef
In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Once it’s nearly done, add the chopped onion and cook until softened. Stir in the garlic and cook briefly until fragrant. Drain any excess grease.

2. Build the Flavor
Season the beef mixture with chili powder, cumin, salt, and pepper. Add the diced tomatoes and half of the enchilada sauce. Let everything simmer for a few minutes so the flavors come together. If you’re using beans or corn, stir them in now.

3. Layer the Casserole
Preheat your oven to 180°C (350°F) and lightly grease a baking dish.

  • Spread a thin layer of enchilada sauce on the bottom
  • Add a layer of tortillas
  • Spoon over some of the beef mixture
  • Sprinkle cheese on top

Repeat the layers until all ingredients are used, finishing with a generous layer of cheese.

4. Bake Until Bubbly
Cover with foil and bake for about 20 minutes. Remove the foil and bake another 10–15 minutes, until the cheese is melted and slightly golden.

5. Rest and Serve
Let the casserole sit for 5–10 minutes before slicing. Garnish with fresh cilantro or green onions, and serve warm.

Helpful Tips

  • Choose your tortillas: Corn adds a more traditional flavor, while flour gives a softer texture.
  • Turn up the heat: Add jalapeños or hot sauce if you like it spicy.
  • Switch it up: Ground chicken or turkey works just as well as beef.
  • Make ahead: Assemble the dish in advance and refrigerate until ready to bake.

Why This Recipe Works

This casserole delivers everything you love about enchiladas—savory meat, rich sauce, and melted cheese—in a much simpler format. It’s easy to customize, great for feeding a group, and even better the next day.

Warm, satisfying, and packed with flavor, this dish is comfort food at its best—no rolling required.
