Blueberry Biscuits

Soft, fluffy drop-style biscuits loaded with juicy blueberries and topped with a sweet lemon glaze. Great for breakfast, brunch, or a quick treat!

Ingredients

For the Biscuits

  • 2 cups all-purpose flour
  • 1 cup cold milk
  • 1/3 cup white sugar
  • 5 tbsp butter (freeze 1 stick for grating/chunking)
  • 4 tsp baking powder
  • 1 tsp salt
  • 3 oz fresh or dried blueberries

For the Glaze

  • 1 cup powdered sugar
  • 1/8 cup water
  • 1 tsp vanilla extract
  • 1/2 tsp lemon juice
  • 2 tbsp honey

Instructions

1. Preheat and prepare

  1. Preheat oven to 450°F (230°C).
  2. Place 1 stick of butter in the freezer for about 1 hour so it becomes extra firm.

2. Make the biscuit dough

  1. In a large bowl, mix: flour, sugar, baking powder, and salt.
  2. Add the cold milk and blueberries; stir gently.
  3. Remove the frozen butter from the freezer and break or grate it into small chunks.
  4. Sprinkle the frozen butter pieces evenly over the dough.
  5. Fold and knead the dough several times until the butter is evenly distributed.

3. Shape the biscuits

  1. Place the dough on a floured surface.
  2. Roll to 1/8–1/4 inch thickness.
  3. Cut out about 6 biscuits using a biscuit cutter (or a cup).

4. Bake

  1. Place biscuits on a baking sheet.
  2. Bake for 7–12 minutes, or until lightly golden on top.
  3. Melt 1 tbsp butter and brush over the hot biscuits.

5. Make the glaze

  1. Mix together powdered sugar, water, vanilla, lemon juice, and honey until smooth.
  2. Drizzle over warm biscuits.
