A rich, decadent upgrade to classic French toast, this version delivers a custard-like interior with a beautifully golden crust. It’s perfect for relaxed weekend brunches, holidays, or anytime you want breakfast to feel a little special.
Ingredients
For the Custard Soak
- 3 large eggs
- ¾ cup heavy cream
- ¾ cup whole milk
- 3 tablespoons granulated sugar
- 1½ teaspoons vanilla extract
- ¼ teaspoon ground cinnamon
- Pinch of salt
- 1 tablespoon orange liqueur or orange juice (optional)
For Assembly
- 8 slices thick-cut brioche or challah (about 1-inch thick)
- 3 tablespoons unsalted butter, divided
- Maple syrup, for serving
- Fresh berries or powdered sugar, for garnish (optional)
Instructions
1. Make the Custard
In a large shallow bowl, whisk together the eggs, heavy cream, milk, sugar, vanilla, cinnamon, salt, and orange liqueur (if using) until smooth and fully combined.
2. Soak the Bread
Dip each slice of bread into the custard, letting it soak for 20–30 seconds per side. The bread should absorb plenty of liquid without becoming soggy.
Place soaked slices on a wire rack set over a baking sheet while heating the pan.
3. Cook the French Toast
Heat a large skillet or griddle over medium heat. Add 1 tablespoon butter.
When the butter is melted and bubbling, add 2–3 slices of bread (do not overcrowd). Cook for 3–4 minutes per side, until deeply golden and the center feels set when gently pressed.
4. Keep Warm
Transfer cooked slices to a baking sheet in a 200°F (95°C) oven while cooking remaining batches, adding more butter as needed.
5. Serve
Serve immediately with warm maple syrup and garnish with fresh berries or powdered sugar if desired.
Tips for Success
- Use day-old bread for better absorption without falling apart
- Don’t rush the soak—this creates the creamy interior
- Keep heat at medium to avoid burning before the center cooks
- For extra richness, whisk 1 tablespoon cream cheese into the custard
- Try cinnamon sugar or lemon zest for subtle variations
Flavor Variations
- Citrus Spice: Add zest of 1 orange and ½ teaspoon cardamom (replace cinnamon)
- Dessert-Style: Serve with salted caramel, toasted pecans, and sliced bananas
- Nutty Maple: Swap sugar for maple syrup and add 2 tablespoons finely ground toasted nuts to the custard
Storage
- Refrigerate cooked slices in an airtight container for up to 3 days (layer with parchment).
- Freeze for up to 2 months by freezing slices flat, then transferring to a freezer-safe container.
Reheating (Best Texture)
- Avoid the microwave.
- Reheat refrigerated slices in a toaster, toaster oven, or skillet until crisp.
- Reheat frozen slices directly in a buttered skillet over medium-low heat, covering briefly to warm through.
Enjoy this luxurious French toast that balances crisp edges with a soft, custardy center—comforting, elegant, and always a crowd-pleaser 🍞✨
