Fried Chicken Gizzards

Crunchy on the outside, tender on the inside, and packed with bold seasoning, fried chicken gizzards are a classic comfort food favorite. Soaking them in buttermilk helps soften the texture, while a well-seasoned flour coating creates that irresistible golden crunch. Perfect as a snack, appetizer, or hearty meal, these gizzards are surprisingly addictive once you take the first bite.

Ingredients

  • Chicken gizzards
  • Buttermilk
  • All-purpose flour
  • Garlic powder
  • Onion powder
  • Paprika
  • Cayenne pepper
  • Salt
  • Black pepper
  • Oil, for frying

Instructions

  1. Prep the Gizzards
Rinse the chicken gizzards thoroughly and trim away any excess fat or tough connective tissue.
  2. Tenderize
Place the cleaned gizzards in a bowl and cover completely with buttermilk. Refrigerate for at least 2 hours, or overnight for the most tender results.
  3. Season the Flour
In a separate bowl, combine flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. Mix well to evenly distribute the spices.
  4. Coat the Gizzards
Remove the gizzards from the buttermilk, letting excess drip off. Dredge them thoroughly in the seasoned flour, pressing lightly to ensure a good coating.
  5. Fry Until Crispy
Heat oil in a deep skillet or pot to 350°F (175°C). Fry the gizzards in batches for 5–7 minutes, turning occasionally, until golden brown and crispy.
  6. Drain and Serve
Remove the gizzards from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.

Tips

  • Don’t overcrowd the pan—frying in batches keeps the oil hot and the gizzards crispy.
  • For extra crunch, let the coated gizzards rest for 5–10 minutes before frying.
  • Great dipping options include ranch, hot sauce, honey mustard, or spicy mayo.

Crunchy, savory, and full of flavor, these fried chicken gizzards are a true Southern-style treat that always hits the spot. 🍗🔥
