Step-by-Step Method

Step 1: Prepare the Ingredients

  • Wash the bell peppers, remove seeds, and slice into thin strips.
  • Peel and slice the onion into thin half-moons.
  • Mince the garlic.
  • If using sausage links, slice into 1-inch pieces. If using bulk sausage, break it into bite-sized chunks.

Step 2: Cook the Sausage

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add the sausage and cook for 5–7 minutes, turning occasionally, until browned.
  3. Remove the sausage from the skillet and set aside, leaving the rendered fat in the pan for flavor.

Step 3: Sauté the Vegetables

  1. Add the remaining 1 tablespoon olive oil to the skillet if needed.
  2. Add the onions and cook for 2–3 minutes until they begin to soften.
