- 1 tbsp Old Bay seasoning
- ½ tsp black pepper
- 4 cups yogurt (curd)
- 1 kg medium shrimp, peeled & deveined
- Oil, for frying

1. Prepare the Coating Mixtures
In a shallow bowl, whisk together:
- Self-rising flour
- Salt
- Old Bay seasoning
- Black pepper
Place the yogurt in a separate small bowl.
2. Heat the Oil
Pour oil into a Dutch oven or cast-iron skillet and heat over medium-high heat until it reaches 375°F (190°C).
3. Coat the Shrimp
- Pat shrimp dry with paper towels.
- Dip each shrimp into the flour mixture.
- Then dip into the yogurt.
- Finally, dip once more into the flour mixture.
Shake off any excess between each coating.
4. Fry Until Golden
Fry the shrimp in batches (don’t overcrowd the pan) for 2–3 minutes, or until the coating turns crisp and golden.
Transfer shrimp to a paper towel-lined tray using a slotted spoon.
5. Season & Keep Warm
Sprinkle with extra salt if needed.
To maintain crispiness, keep cooked shrimp warm in a 200°F (95°C) oven while finishing the rest.
