Ingredients

  • For the Meatloaf:
  • 2 lbs 900 g ground beef
  • 1 medium yellow onion finely diced
  • 2 large eggs
  • 1 cup 100 g breadcrumbs
  • ½ cup 120 ml milk
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • For the Glaze:
  • ½ cup 120 g ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard

Method

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Prepare the mixture: In a large bowl, combine the ground beef, onion, eggs, breadcrumbs, milk, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning.
  3. Mix gently: Use your hands or a large spoon to combine everything just until evenly mixed. Avoid overmixing so the meatloaf stays tender.
  4. Shape the meatloaf: Transfer the mixture to the prepared pan and shape it into an even loaf.
  5. Make the glaze: In a small bowl, mix together the ketchup, brown sugar, and mustard.
  6. Add the glaze: Spread about half of the glaze evenly over the top of the meatloaf.
  7. Bake: Bake for 45 minutes. Spread the remaining glaze over the top and continue baking for another 15–20 minutes, or until the center reaches 160°F (71°C).
  8. Rest: Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
  9. Serve: Slice and serve warm with mashed potatoes, green beans, or your favorite sides.

Notes

  • Do not overmix the ground beef mixture, as this can make the meatloaf dense.
  • Letting the meatloaf rest before slicing helps it hold together better.
  • For a richer flavor, you can substitute part of the ground beef with ground pork.
  • Leftovers can be refrigerated in an airtight container for up to 3–4 days.
  • Meatloaf can also be sliced and reheated for sandwiches.
