These easy 3-Ingredient Pineapple Coconut Bars are soft, chewy, and packed with tropical flavor. Made with just crushed pineapple, shredded coconut, and sweetened condensed milk, they come together quickly with minimal effort.

Ingredients
  

  • 1 can 20 oz / 567 g crushed pineapple, well drained
  • 3 cups 240 g sweetened shredded coconut
  • 1 can 14 oz / 396 g sweetened condensed milk

Method
 

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Combine the ingredients: In a large bowl, mix the well-drained crushed pineapple, shredded coconut, and sweetened condensed milk until evenly combined.
  3. Transfer to the pan: Spread the mixture evenly into the prepared baking pan. Press it down firmly with the back of a spoon or spatula.
  4. Bake: Bake for 25–30 minutes, or until the edges are lightly golden and the center is set.
  5. Cool completely: Remove from the oven and allow the bars to cool completely in the pan.
  6. Cut and serve: Lift the bars out using the parchment paper, then cut into 12 squares or bars.

Notes

  • Drain the pineapple very well to prevent the bars from becoming too wet.
  • For cleaner cuts, allow the bars to cool completely before slicing.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • You can lightly toast the coconut before mixing if you want a deeper coconut flavor.
