These Air Fryer Roasted Potatoes are perfectly crispy on the outside and fluffy on the inside. Seasoned with garlic, herbs, and simple spices, they're an easy side dish that pairs well with everything from grilled chicken to steak. Ingredients
  

  • 1 1/2 pounds baby Yukon Gold or baby red potatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional

Method
 

  1. Wash and dry the potatoes thoroughly. Cut larger potatoes into evenly sized pieces.
  2. In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and black pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 3–5 minutes, if your model requires preheating.
  4. Arrange the potatoes in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
  5. Air fry for 18–22 minutes, shaking the basket halfway through cooking, until the potatoes are golden brown and fork-tender.
  6. Transfer to a serving bowl and garnish with chopped parsley, if desired.
  7. Serve immediately while hot and crispy.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 20–30 minutes, then dry them thoroughly before seasoning.
  • Sprinkle with grated Parmesan cheese during the last 2 minutes of cooking for a cheesy variation.
  • Add fresh rosemary or thyme for additional flavor.
  • Store leftovers in the refrigerator for up to 3 days and reheat in the air fryer at 375°F (190°C) for 3–5 minutes.
